Recipe of the week (ROTW)


I have an amazing scrambled egg recipe for you tonight! I had this for lunch, but it could be for any meal of the day you choose! So here’s what I put in the mix:

Tuna & Veggie Scramble

  • 1/2 diced yellow bell pepper
  • 1/4 cup diced purple onion
  • 2 mushrooms sliced & diced
  • 2 eggs, beaten
  • 1/4 cup shredded tuna
  • Grated cheese
  • Garlic powder
  • salsa
  • cilantro-jalapeno hummus (you could use any flavor)

Directions: Sautee the first 3 ingredients for 6-10 minutes. Add in the tuna. Then beat the eggs with cheese, garlic powder, and hummus. Pour over the tuna and veggies. Cook thoroughly.


I put salsa on top of it and ate a handful of crackers on the side for a bit of crunch. I also ate a small whole wheat tortilla with it.










The flavor was pretty unbelievable to me. I think what really made it, was the hummus and tuna!
