Last Long run, Smoked Gouda Grilled Cheese, & Gluten Free Blondies

Well, this morning I ran my last long run before the half marathon (next Sunday). I ran 8 glorious miles and it flew by. I averaged good pace overall and only stopped twice at the water stops.


When we got back, it was bagel timeeee! Yesterday was National Bagel Day so I hope you got a bagel in your belly!!

Then it was time for the drawing. Me, my mom, and my dad, all won shirts! Plus got a free t-shirt from Mountain High Outfitters…aren’t they just sweetSmile.

And later that day, I helped my dad plant our green vegetables…all my favorites!


This morning I had a green smoothie and scrambled egg in coconut oil. Then we headed for church



Well, I consider this Lunch/Dinner…that’s usually how our Sundays roll…

I wanted to make this recipe…

Roasted Mushrooms and Onions with Gouda Grilled Cheese

And so I did.


I used a leftover hamburger bun for mine…Don’t waste food! And then we had another extra sandwich, so I split that one and took a picture of it too. The Gouda…was so good. We got Smoked Gouda from Costco…and it tasted sooooo good on this sandwich. Just so you know, I followed the recipe exactly.


I wanted to make these gluten free chocolate chip blondies from Rachael Ray magazine…

But I had to change some stuff up…here’s how I did it:

  • 1 1/4 cups sliced pecans
  • 1 1/3 cups all purpose gluten free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark brown sugar
  • 4 tablespoons melted coconut oil
  • 1/3 cup applesauce
  • 1/2 teaspoon pure almond extract
  • 3 ounces dark chocolate (preferably 72% to73% cocoa), finely chopped

I cut back on the sugar and they were fine…unless you prefer things to be extremely sweet. And instead of butter, I put coconut oil. I love coconut oil.


I guess there’s no running today for me…it’s pouring down rain. Have a good day Smile

    The Smoked Gouda Grilled Cheese with roasted onions and mushrooms was a first for me. The sweetness of the onions and the smokey flavor of the Gouda is a perfect match.

      Bagels are the best! Especially when it’s been a while since you’ve had one! I didn’t know it was bagel day until Sunday morning and I was like “oh that’s why we have bagels” lol. And thank you!!

    I was wondering if I could get your quinoa granola recipe cause I couldnt find it on the blog
    I make something similar but its always nicr to do a revised version of something and mix it up
    Also have an amazing organic healthy guilt free home made chocolate I do. Very yummy and not naughty at all plus dairy and gluten free so let me know if u want it

        This is the healthy chocolate recipe for you
        Mix it all in a bowl and you can freeze it in shapes or in a plastic container and just break it up.
        All Ingredients I use are organix and its guilt free yummyness. Also best to store them in the freezer as due to them having no nasty preservatives and solidifiers theu can tend to get a bit melty…

        5tbs carob powder or raw cacao powder
        5tbs coconut oil
        2tbs maca powder (you may also like this in your kale green protein smoothje its great for you)
        2tbs stevia add more if u like it sweeter
        Handfull of goji berries
        You can add anything into trhe chocolate I have also used activated almonds or shredded coconut
