Do You Like? + Best Pancakes Ever

I am too excited with my new blog theme!

I was seriously brainstorming all week and finally got it!

I’m probably most excited about my NEW SIDEBAR!

After the poll from Monday, I realized everyone liked something pinkish and something in the background.

So, with my blog name, In Shape Cupcake, I decided to create a background using a dumbbell and a cupcake.

I hope you like it and I am still looking to always improve it. So suggestions are always nice Smile

Breakfast

I think I made the best and easiest pancakes ever this morning.

The Two Ingredient Pancake…Inspired by Izy from Top With Cinnamon! She’s 17, by the way! And has an awesome blog!

Ingredients:

  • 1 medium banana
  • 2 whole eggs

 

Additional Ingredients I added

  • 1 TBSP Chia Seeds
  • 1 dash of Vanilla extract
  • Eyeballed some baking powder—you really can’t go wrong with this unless you put like 3 tbsp of it.

Syrup

  • 1 or + TBSP of Jelly/Jam of choice
  • Melt in microwave 20seconds

Directions: Mash the banana. Whisk in the 2 eggs. Add what ever else you would like, you could put almond or peanut butter if you would rather. I highly recommend the baking powder and chia seeds.

Spray a skillet with oil and put on medium heat.

Be very, very PATIENT with these pancakes while they cook. It takes longer because there is no flour and such. They are very delicate and fluffy. Don’t mess them up!

I got 4 1/2 pancakes out of this recipe.

It may not look all that beautiful…or as good as Izy’s. But, they are delicious!!!

Now, I’m going to try to figure out what to do today.

    I’m LOVING the blog theme, it’s adorable and fits ISC perfectly! THANK YOU so much for posting a pancake recipe. I’m slowly trying to make more healthy pancakes (fruit parfaits only last for so long in the interest department) and this looks simple and delicious 🙂
