Food Friday: Chicken Apple Sausage Tacos!

Good morning, it’s Friday!

Which means its Food Friday…which also means I can share with you a delicious taco recipe.


Chicken Apple Sausage Tacos                            Time: 30 minutes

Ingredients                                                                                        Makes: 8 Tacos

  • Smart & Delicious Mini Multi Bran Soft Wraps
  • 1 package Chicken Apple Sausage (CAS)
  • 1 package shredded cheddar or shred your own (2 cups of thick shredded cheese)
  • Shredded Iceberg Lettuce
  • Chopped Cilantro
  • Sour cream
  • 3 avocados (made into guacamole)
  • Salsa
  • Sweet Potato Fries (if you want a side)


  • Heat a skillet on medium high with olive oil. Slice the sausage thin and long ways for a shredded look.
  • Saute the sausage for 10-12 minutes. Make Guacamole while sausage is cooking!
  • Turn oven on Hi Broil
  • Create tacos (pictures below)
  • After you make tacos and they are packed in, place them in oven for 2 minutes until tops of tortillas are crispy and cheese is melted.
  • Sour cream, cilantro, and salsa on top!

I Was Tricked

Good morning!

Yesterday was a pretty fun day…

First it started with regular cooked oats (in the microwave…eh)

Added to it were thawed berries, some almond butter, chia seeds, and unsweetened shredded coconut. Yum!

I went on a 6 mile walk/run while listening to a sermon that I really wanted to hear. I shouldn’t have waited late though, because it was so hot!

And the cutest little dog followed me all the way home from the other side of the neighborhood…he wouldn’t go away. So I felt bad, hoping his owners aren’t yelling his name. But he finally left.

After I got back, I got ready as soon as I could and my mom and I went to Costco, where I sampled the best smoked salmon and cream cheese “sandwich” (it was just on a a tiny slice of whole wheat bread for samples) I should have taken a picture. It was so good!

We stopped at Starbucks after seeing that people could get a Pumpkin Spice Latte early…I told the lady and gave her the code but she said I couldn’t get one til next week! I was so mad! Everyone on instagram had pictures of them! Can someone please tell me why I couldn’t get one? I think I was tricked and I was supposed to be able to get one.

I settled for a Vanilla Iced Coffee…


We stopped at Publix and got a few Buy One Get One deals which one of these things were Sweet Potato Fries!!! Omg.

I have this awesome twist on a taco recipe for tonight and I can’t wait to share it for FOOD FRIDAY! Sweet potato fries will be on the side. So excited Smile


Fresh made salads!


There were two really ripe avocados in my fridge, so I had to make guacamole, obviously.


At Costco, we picked up fresh prepared seafood stuffed mushrooms and some raw asparagus to sauté. So good!! Suggest you try the stuffed mushrooms if you shop at Costco!


Okay, I gotta finish my coffee, then its time for fasted cardio!

WIAW 8/27 Clean & Easy Turkey Meatballs with Cilantro & Mushrooms

Happy Wednesday and WIAW! I had some really Good Eats yesterday…and an awesome clean eating recipe.

I started my morning with fasted cardio in my neighborhood and I was starving by the time I was done.



I made overnight oats the night before, put in a ton of pumpkin spice and cinnamon because its so good, a little peanut butter action on top, and some frozen berries that were thawed!



For my second meal of the day, I ate a couple of eggs with hummus on top, a rice cake (not pictured) and half an apple with cinnamon sprinkled on top.

Before I worked my biceps and shoulders, I quickly came up with dinner. We had a package of lean ground turkey so I decided to make meatballs!

Clean & Easy Turkey Meatballs with Cilantro & Mushrooms
  • 1 1/2-2 lbs Lean Ground Turkey
  • 3/4 cup brown rice flour
  • 1/3 cup finely chopped cilantro
  • 3 scallions, finely chopped
  • 1/3 cup finely chopped mushrooms
  • 2 tbsp minced garlic
  • 2 tablespoons chopped fresh parsley (optional) I only put a little bit
  • 1 large egg
  • Coarse salt and ground pepper
  • Dash of cayenne and chili powder


  1. Step 1

    Sauté the minced garlic and finely chopped mushrooms in a pan with olive oil.

  2. Step 2

    In a large bowl, combine turkey, cilantro, scallions, garlic and mushrooms, egg, 1 1/2 teaspoons salt, 1/2 teaspoon pepper, cayenne and chili powder, and brown rice flour; mix gently with a fork.

  3. Step 3

    With hands, form mixture into balls, each equal to 2 level tablespoons; arrange on a skillet with olive oil (medium high heat) to cook 10 minutes on each side.

  4. Step 4

    Cover the meatballs with a glass lid for 10 minutes on medium low heat and then they should be ready!




Worked out as soon as I was done cooking! (Biceps and shoulders)

Then it was time to eat! I couldn’t wait to see how these tasted. I loved the cilantro and onion taste together. Made a fresh tasting meatball.


I had two of my turkey meatballs, broccoli, quinoa, 1/2 sweet potato with almond butter and a Zevia!
