3 Ingredient Sweet Potato Flatbread

Happy Thursday!

Sweet Potato Flat bread

Today, I want to share my version of Sweet Potato flatbread!

After browsing through flatbread recipes on pinterest, I remembered I had some leftover baked sweet potatoes in the fridge. I immediately thought of a recipe off the top of my head.  So, when I got up yesterday morning to make breakfast, I got started on the flatbread. Its SO easy, which is making me love this stuff even more. I can’t wait to make it for my turkey burgers or deli sandwiches!

Okay, let’s get to this recipe!

Sweet Potato Flat Bread #290909090909

  • Preheat oven to 350F
  • Simply beat the eggs with a hand mixer in a large bowl.
  • Add the cup of baked sweet potato (room temp)
  • Mix again
  • Add the coconut flour
  • Mix again
  • OPTIONAL add ins: 1/2 tsp vanilla extract/stevia/cinnamon/baking powder
  • The batter should be a little on the thick side. If it’s still too wet and not holding together, add a little more coconut flour a tablespoon at a time.
  • On a pizza pan, arrange parchment paper on top.
  • Grease the parchment paper (I used 1 tbsp of coconut oil and it melted as soon as I started spreading it in a circle)
  • Spoon the sweet potato mixture onto the greased parchment paper and beginning forming it like you would for a flat pizza crust. (This may take some time)
  • And bake for 25 minutes!

Sweet Potato Flatbread #3

I ended up adding a yogurt/almond butter/stevia mixture on top of my flat bread with some sliced banana!

I hope you can try this out next time you decide to bake some sweet potatoes! It really is delicious! Great for Fall, I must say. I added a little vanilla and cinnamon and it tasted so good! Can’t wait to make more!

  • Do you like sweet potatoes?
  • What kind of recipes have you made with sweet potatoes?
  • Favorite fruit for breakfast? (Mine is peach or banana)

I Love Crackers! (Review)

Happy What I Ate Wednesday!

Okay, you guys…I love Crunchmaster. They are certified gluten free and delicious!

I’ve been eating these –>

…for so long! Like 2.5 years. Ever since we started going to Costco. We tried them once, and haven’t let go since. We have yet to get tired of them.

Anyway, I reached out to the company a while ago, telling them how much I love their crackers. Little did I know, they had so many other flavors. AH! What?

When they e-mailed me, they asked me which ones I’d love to try.

I asked for these…

I couldn’t wait to try these crackers so, I obviously I had to taste test them all (throughout a few days though). I started with the 7 Ancient Grains first. I loved these! Most definitely my favorite out of all!

7 ancient grains

We took these on our Beach Trip and ate them all in no time with some chicken salad!

  • These are not too salty (just a hint of sea salt)
  • They have the best ingredients! There are only like 6-8 ingredients and its mostly things like: Quinoa, brown rice, sesame, etc. So I recommend these for clean eaters!
  • The taste is perfect, not to overwhelming!

grammy crisps

  • These are great for those times when you need a sweet crunchy treat.
  • Great with coffee
  • Great dipped in chocolate
  • Reminds me of Cinnamon Toast Crunch

I definitely liked the Grammy Crisps, these would be my second favorite!

Hmm, I’m a little iffy on these Cheezy Crisps. I like them but not crazy about them.  So, I asked the family what they thought!

  • My 13 year old sister said she LOVES them! (So I’m guessing kids are going to enjoy these!)
  • She also LOVES the Grammy Crisps. (yes, LOVES is what she said)
  • My mom thought they were delicious!
  • My dad thought they were okay

I actually really like these White Cheddar multi grain crackers! They don’t taste too cheezy which I like…

  • Tastes yummy with hummus or with a piece of cheese on top (cheese overload!)
  • Also tastes great with jalapenos! (MMM, cream cheese would be good too, Laughing Cow!)

These are definitely my next favorite!

  • Not too veggie tasting, just the right amount!
  • Yummy with cheese and hummus!
  • Great to add to a meal or pour in a bowl for snacking before dinner!

I really liked the Roasted vegetable so I recommend these for sure!

So, this is a little different on my WIAW, but I thought it would be fun!

Thanks Jenn for always hosting! Smile

And thank you so much, Crunchmaster, for letting me review your crackers!

  • What are your favorite crackers?
  • Do you eat gluten free or have you tried Crunchmaster crackers?
  • What flavor do you think would be your favorite?

Disclosure: Crunchmaster did not pay me for this post. They kindly sent me samples to review. As always, all opinions are my own.

Beach Recap

Hey loves!

I am back from vacation and it’s time to get back in gear.

I love vacation and never want to leave, but I miss my clean eats! So, when we arrived home, I threw together a quick meal of lean ground turkey and steamed broccoli with hummus and a rice cake.

Now onto my beach recap. First off, we just decided to go Friday afternoon. It was totally spontaneous which was so much more fun. We quickly got ready and headed down to Destin!

We made some stops along the way

We stopped at Priester’s Pecans!

We sampled pecans and coffee…and I bought a shirt.

It wasn’t long after that stop, we arrived in Destin! We couldn’t wait to get to this little cottage!

It was just so cute! We enjoyed staying here! Definitely want to go back!

We made breakfast and then got ready to go look around 30A. I loveeeeee 30A. If you haven’t went, you must! Last time I was at the beach, we rode bicycles all the way through 30A and back (20 miles or so) and it was awesome…except for the massive sunburn I ended up having.

We made sure to stop at AMAVIDA, an organic coffee and tea place.

Iced Chai Tea Please!

Finally, after a few hours, we started to get really hungry. The Crab Trap seemed to have got the vote! So we went!

My mom and dad shared a plate, and me and my sister shared a plate.

Lydia and I decided to get the Snapper and Shrimp plate with veggies and fries…and I’m so glad we decided to share because I could not have eaten all of this by myself without feeling like a whale.

We chilled for a bit after we got done. Had to snap this pic of my parents…

We ended up chilling some more at the cottage and called it a day. We woke up early though…

We headed to the beach before breakfast and thought we were going to be walking on the beach for a while before everyone else…but a church was having a service out on the beach and was inviting everyone to come and join. So, we did!

The message was really good. It was about forgiving. You need to forgive yourself, forgive others, and ask God to forgive you but most importantly RECEIVE his forgiveness. There are a lot of people who ask God to forgive them, but “feel” like he didn’t forgive them. Which, would be calling God a liar. They forget to believe that God ALWAYS forgives. He loves you! So, remember to receive His blessings!IMG_20130915_100135

We stopped at a coffee shop on our way back home and enjoyed our coffee in this little area they had set up in the backyard. So cute!

Later that afternoon I got in a vacation workout and got my sweat on. Lots of box jumps, burpees, and lunges were involved! And pushups! My chest was definitely sore Monday!

Sunday dinner…

Then we went walking on the beach again and watched the sunset! It was so beautiful.

I started with this…Strawberry banana chocolate Designer Whey Protein Smoothie

We packed and relaxed before we left.

Didn’t want to leave!

Here’s us trying to be all serious, I guess. I actually have no idea what we were doing!

trying to be cool

Around lunch time, we saw this cool looking Mexican place to eat called Pepito’s so we stopped to eat there. I got a chicken taco salad.

And I’m so mad at myself because after we stopped at Starbucks to get a coffee (Café Americano to be exact), we HAD to stop at this place that had Gelato. We didn’t try it last time we were there so we made sure to do it this time. I ended up getting some Pistachio Gelato and really wish I would have taken a picture. I had to eat it kind of fast because it was melting!

And that’s about it folks! Here’s some Beach Pictures for you to gaze at…

  • What’s your favorite thing to do at the beach?
  • Have your tried Gelato? (This was my first time trying it!)
  • Have you been on 30A?
