Breakfast was a delicious bowl of plain Greek yogurt, stevia, coconut flour, organic PB, strawberries, and pumpkin flax seed granola

Lunch was my post workout meal…green smoothie it was!

Dinner was delicious! I got a little creative in the kitchen…

I sautéed mushrooms, onions, and sliced strawberries in balsamic vinegar and laid it on a bed of spinach, topped with cherry tomatoes and bell-pepper and sautéed broccoli.

I toasted took half of a French bread bun and halved it again, toasted it with coconut oil on top. Let’s just say, dinner was very filling! So many vegetables!

Here’s the recipe!

Sunday Eats to Start a Marvelous Week

Gotta be truthful here, I had the laziest weekend. But, I had the busiest week.  And Friday was really crazy!!!

I had went into Wal-Mart to grab something before I headed onward to my destination, and when I got back in my car to leave the parking lot, my car WOULDN’T start! I was very thankful that my dad was about 10 minutes away and was able to come jump my car…but sadly, that didn’t fix the problem! After a few minutes, my dad said the starter needed to be replaced. So long story short, I didn’t have a car til Saturday afternoon and I was just aggravated! So, a lazy weekend was much needed. A lot of catching up on school and blogging was definitely on the agenda.

But, I managed to grab my eats from yesterday on camera!

I started out the morning with coffee, buckwheat pancakes, melted coconut oil, strawberries, and a slice of baked bacon.

Yum! Right?

After a lot of flash card making for a future test and just for my organizational habits…came dinner!

No, I didn’t eat lunch…we had an early dinner  because breakfast was pretty late.

We had grilled hamburgers with grilled onion, sliced tomato, muenster cheese, lettuce, on a fresh baked french bread bun (try saying that 5 times fast) and I sliced up some red potatoes and baked them in the oven for 30 minutes on 400 degrees.

Delicious eats!

I also sneaked in a little dark chocolate! Gotta have that! Smile

Anyway, thanks Katie for hosting once again and I hope all of you have A MARVELOUS MONDAY and a Marvelous Week!

P.S. Look out for tomorrow’s post for my favorite sandwich recipe!
