Super Food Breakfast Bar

Hey, look! It’s a recipe today! I had a lot of fun coming up with something quick and healthy that provided good fats, energy, and nutrients.

I didn’t have any dates on hand (which you can use if you’d rather!!!), so I used currants instead that we had picked up at a health food store from the beach last week.

Don’t these just look so cute? I wouldn’t go eat the whole batch though…that’s like some major calorie consumption, right there. But, hey, I mean if you want to…go right ahead. I’ll support you. Maybe.

After I processed it in my magic bullet…

After I let it sit in the freeze…then it nicely came together as I pressed it into the dish.

I pressed the pumpkin seeds into the top of the mixture. Let it bake on 300 degrees for 15 minutes…

And voilà! All finished!
