Happy What I Ate Wednesday, foodies and readers!
It’s funny to me how quickly WIAW comes around…but hey, it’s completely fine with me because it might be my favorite day. So, thanks to Jenn for hosting!
So, last night I had the pleasure of running some crazy trails at Red Mountain Park with Alabama Outdoors, and let me tell you. Trails are growing on me. I need more! The only problem with that, is that all the nearest trails are between 20-30 minutes from my house. I did see a tepee at Red Mountain Park…I could possibly move in? Yes? Okay, maybe not such a good idea. Alright, moving on!
Yesterday, if you read my post, I was having a difficult time finding something to eat for breakfast because there were NO bananas! Almost everything I eat for breakfast has a banana in it and I really wanted a banana. So, I ended up just eating like 1/2 cup of coconut chia granola cereal with almond milk and some pecans (with a sad face).
Speaking of pecans, you know you’re supposed to soak them? We’ve been soaking our pecans lately and let me tell you, they taste way better.
For lunch, I had tuna salad (posted the recipe on instagram), organic blue corn chips, and 1/2 Fuji apple that tasted SO GOOD.
From lunch and until 4:30, I was in the kitchen baking! I made my Paleo Coconut Flour Cupcakes but I added more liquid and brown rice flour to the recipe to thin out and create more batter so I could get more cupcakes! Also, I added some chocolate chips and my lemon vanilla icing<—recipe also on my instagram!
By 5:45, I was at the park and ready to run trails. We didn’t get through until 7 and we stayed a while and talked. Then when we got home which was about 8:00 p.m., food was not on my mind. I don’t know about you, but eating a meal at 8:00 at night, is not very fun to me. So, I ate nothing. Boo me. Yeah, whatever. I survived! I’m ready to devour the whole kitchen. Okay, kidding. That would be rude.
But, you know what would have been good last night? A quest bar!

Trail running is wicked fun (and super challenging!) – I definitely prefer it over road running.

Being banana-less is a serious case for emergency grocery runs in my house. I’m currently left with two and feeling a serious need to stock up again.
I’ve seen many interesting Quest bar dessert recipes like cheesecake cookie cups which I’d really like to try.

Although I have lived in the US before I still get surprised when I hear dinner at 6 pm or 7pm. Here in Spain we have very different eating schedules and we can even have dinner at 10pm and be totally normal! However, I am kind of a weirdo because I have dinner really early when my family is still having an afternoon snack!!
Quest bars for me are perfect at anytime but I enjoy them most as a special treat and I would definitely make my next birthday cake out of them!!!

Love Quest bars for dessert or a snack. Specially toasted in the oven for a few minutes!
I would use my Quest bars for refueling after weight lifting, especially after I pop em in the microwave for few seconds :).

I would use the quest bars for college! Especially when I running from gymnastics practice to class, they will give me the energy I need to pay attention and train hard!

YUMMMM Quest Bars are life!
Quest bars are easy to keep in my car for snacking on when I’m out and about or commuting. They don’t get messy when warm like other bars do!
