I’m jumping right into What I Ate Wednesday today, so thanks to Jenn for hosting! And let’s get the ball rollin’!
As a foodie and someone who’s gotta run early, breakfast is the first thing on my mind when I wake up. The night before, I washed and chopped up a lot of celery that needed to be juiced so, I quickly grabbed some greens and a couple of carrots to add to the celery. It was delicious!
About 20 minutes later, I grabbed some boiled eggs (prepped the night before) and a handful of Cascadian Farm cereal. I stayed full for hours, it seemed. Eating good proteins, carbs, and having energizing juice in the morning really keeps me going.
After breakfast, I went running 3.25 miles. Warmed up nice and easy the first 2 miles and then 6 crazy hill repeats, then ran till I got home!
Then I completed 3 rounds of that arm workout!
Yep, super sore this morning…
Lunch was kind of too early for me, so I ended up not eating any of those chickpeas or the avocado. It just looked unappetizing as soon as I sat down to eat.
So I replaced the chickpeas and avocado with a baked quest bar because…who wouldn’t?
And I tried to take a decent picture of my dinner, but it was rainy outside and the lighting just sucked…so yeah, this is what you get stuck with.
Organic Whole Wheat pasta, meat sauce, lots of fresh basil, and baked parmesan artichokes!

Mmmmmmm…baked quest bar!!! That always sounds good but it sounds even better when it comes after intuitive eating and unexpected decisions… 🙂
Also those parmesan artichokes are heavenly!!!
In my pasta I also love artichokes or eggplant as another veggie, definitely cheese and olives.. Lately I prefer cold pasta salads dressed with fresh tomatoes, pesto or just olive oil…I just love pasta!!
Yesterday I did my long run: 7 miles. For me that is long as I average only 2 to 3 miles…but I am working on it!!!
Oh my goodness, high five on the 7 miles!
I love pasta pictures – even when the lighting doesn’t cooperate. I’m actually planning on making a shrimp and veggie whole wheat pasta tonight.

Lately breakfasts have been all about smoothies!
Breakfast was plain oatmeal with a mashed up banana in it.
I love a classic tomato and basil sauce on my pasta. I would complain if it was topped with muscles or scallops as well…
My workout was an easy 4 mile run. I needed an easy day.
That ‘better sore than sorry’ quote has been the reason I’ve done so many workouts. It’s seriously one of my favs! I’ve yet to have dinner yet, so I wouldn’t mind your chickpeas or avo that you didn’t want about now 😉 That being said a baked quest bar sounds amazing. I know this is crazy, but I’ve never baked a quest bar before. You’re the second blog today that I’ve heard doing that, and now I feel like I’ve been missing out!
Always swap the chickpeas for a quest bar. Wise Wise choice.
Quest bar trumps just about everything…especially chickpeas. Excellent choice 😉
