Trail Running, Food, and Brand Love

Hey! How’s everyone on this fine Thursday…wait, it’s Thursday? WOW, this week is flying by!

What have I been doing?

Um…trail running!

What? You don’t? Don’t you know its like the coolest thing ever? If you can’t trail run though, I totally understand.

Actually, I just started getting into it. I’ve always loved it. For example, for my 17th birthday a couple years ago, I asked to go trail running. No presents! But, it’s always been hard to do it consistently so I’ve given up several times.

It’s way easier to go trail running when Alabama Outdoors hosts a trail run for us crazy runners, or that I’ve been able to venture out to Oak Mountain to find some places safe enough for me to run. As I’m starting up on training for my next half marathon, I thought some trail running would be a great addition to my runs…so yep, just having fun!

On another note, I’m also keeping my eats clean and just making dreams happen like any driven individual.

For breakfast yesterday, I wish I had a picture! Wow, it was good! I had 2 scrambled eggs on top of toast and jelly. Like, how can you get better than that? It’s just so good!

I had an interview around 11:30 and got back home about 12:45ish and decided on some yogurt for lunch. Which, I also didn’t take a picture of. So, whyyyy am I sharing this? “Audrey, GOSH, you’re so lame!”

Well, you know what? I’ll do better with dinner!

Dinner included a delicious plate of organic pasta, turkey pasta sauce, pesto, more pesto on toast, and lots of broccoli and squash that was from our garden.

Dessert was a yummy Paleo Coconut Flour Cupcake (no frosting Sad smile)

And for breakfast this morning…I had the best overnight oats ever!

For workouts, I didn’t do much. I was so sore (in the booty) from the crazy trail run at Red Mountain yesterday. So, just pushups and planks and sitting on a yoga ball was totally workout enough for me.

Brainstorming on a cookie recipe…so stay tuned on that. You can always follow me on twitter or instagram to see what I’m up to during the day if you’re up to that sort of thing…maybe…maybe not.

Also, just because it’s Thursday, I’m going to throw out a few of my favorite rising brands because…well, it’s Thursday and I’m up for anything that’s positive! Right-O!

First, I gotta give these girls a huge high five for being so positive, driven, passionate, and creative! The Sweet Note Bagel ladies who have created an amazing brand of gluten free bagels that are healthy and delicious. I can’t wait to get my hands on some of these! Crossing my fingers that they come to Alabama soon so I can buy some but for now, I’m good with online shopping! Hello, if you are a Birmingham Foodie, can you get a local store to start carrying these!?

There’s just something so wonderful and inspiring about seeing others so excited about their work and to see them go after their goals!

Other favorite thing right now, is a local fitness magazine, Fit & Well Birmingham! I got pretty excited when they released this magazine. We definitely needed something like this over here and the wonderful tips and healthy locals contributing to the magazine, is great!

You can check them out right here—> Fit & Well Magazine

  • Comment down below with your favorite rising brand or small business!
  • What’s better: Scrambled or Fried eggs?
  • If you had to pick between yoga and hiking, which one would it be?

As always, I love your comments! Thanks for reading, lovelies! Headed to run this beautiful morning!

xx Audrey

P.S. Does anyone else sit on a yoga ball while blogging or working?

WIAW Weekly Version

Hey guys and Happy Hump Day!

Boy, oh, boy! I’ve had some delicious eats come my way the past week at the beach and this week so I just have to share.  Mostly healthy eats, a few are not, but hey, I was on vacation. I’m allowed to have a donut. But first, how do people eat more than one donut? Is it possible? I ate one donut and felt like I just ate a pound of sugar!

And a quick thank-you to our Host, Jenn, who always hosts even if she forgot what day it was! She’s the best Open-mouthed smile

Here’s what I’ve been eating this week!

  • Raspberry Greek yogurt
  • Mahi Mahi, brown rice, broccoli, fresh baked bread, arugula salad with cucumber, bell pepper, and tomatoes with balsamic vinegar

  • A few spoonful’s of Arctic Zero
  • I’ve jucied twice this week! Beets, carrots, lots of celery, ginger, and 1/4 of an apple

  • Sometimes after I juice I’ll have a couple of eggs and a slice of Ezekiel toast
  • I made chicken sundried tomato & red pepper ricotta roll ups from a recipe I found on instagram

  • For father’s day we had stuffed bell peppers, asparagus, peas, squash from our garden, and leftover pasta.
  • Sometimes dinner needs to be simple…here we have: Napa chicken salad from EARTHFARE, CrunchMaster crackers, and 1/2 an apple

Here’s last weeks beach eats!

As soon as we got to the beach, we stopped at Zoe’s Kitchen and I got a Grueben sandwich with Greek salad…sort of like a Rueben sandwich.

These two pictures are from one of the meals we cooked while staying at the cottage.

It’s penne that’s been simmering in sauce, sautéed sweet potatoes, sautéed broccoli and zucchini, and Italian sausage from The Fresh Market

Another dinner…Fresh Market’s Rotisserie chicken, chickpea salad, and roasted yukon gold potatoes with baked beans (we just had to, yum)

A berry sorbet made with my Magic Bullet (more on this later!)

A breakfast we had consisting of Spinach and Sun Dried Tomato quiche from The Fresh Market, fresh fruit, 1/2 slice of TFM’s bacon, and some cereal

One of the delicious desserts I got to try out on our Second day in Santa Rosa…a Toasted Coconut doughnut. Obviously

Enjoyed some froyo on our third day out while bike riding! Amazing flavors at this place called Orange Leaf Frozen Yogurt in Rosemary Beach

Iced coffee was sweatin’ it!

I had this right after our 36 mile bike road! I biked so fast the last 4 miles, I was so hot and there was a cute little health store with amazing products right next to the bike rental. Zevia to the rescue!

On our way back home, there weren’t any amazing restaurants or anything so we stopped at some place called Santa Fe and I got a chicken and veggie quesadilla sort of thing. Wasn’t too bad

And that’s about it, folks. Have a great day and I can’t wait to look at everyone’s delicious WIAW eats!

  • Do you splurge a couple times on vacation?

Mint Chocolate Chip Smoothie Recipe

This fine Monday, I’ve got a fabulous recipe and review for you. I was very blessed to receive a package of Vega One (All-In-One) Protein Powder from the wonderful people at Vega.

Now, I’m really picky about my protein powder…which, I assume most of you are. My protein powder needs to be:

  • Nutritious
  • Tasteful
  • Easy to use in all my recipes
  • And most importantly…made with EXCELLENT ingredients.

I’m very happy to say, that Vega HIT all of those key points. This health nut is quite pleased.

Here’s some delicious information about Vega One:

  • It has 50% of your daily intake of vitamins & minerals!
  • A whopping 15g of Protein
  • 6g Fiber
  • 1.5g omega-3…what!? Awesome
  • Antioxidants
  • Probiotics (which is so, so important! Especially for those who don’t take probiotics in their daily habits)
  • AND you get your GREENS! Yay

I think my favorite part of Vega All-In-One shake is that I can get all of that nutrition without putting so much effort. This is probably one of the best things, in my opinion, for those who are busy and on-the-go. We all forget to take the time to get our vitamins in or planning our meals to make sure we get out all of our greens and antioxidants. Vega makes it a little easier for us. Thank you, Vega!

As soon as I got the protein, I knew EXACTLY what I wanted to make. I’ve been in the mood for chocolate and mint lately, so why not make an extra creamy Mint Chocolate Chip smoothie!? It was the best idea ever. It was so good and there are seriously no words to describe it.

Mint Choc. Chip Smoothie

I added a little water after I got everything going in the blender since the cashews will make it extra creamy and thick.

If you happen to serve it to others or you just want to take a pretty picture, you can garnish it with more mint leaves and chopped dark chocolate…mmmm, yum!

I think I will be making this A LOT this summer. A LOT.

  • What’s your favorite protein powder?
  • Do you think you’ll make this smoothie?

Disclosure: I received a free package of Vega Protein from Vega in exchange for writing a review on the blog.
