***Warning: I made this for my Birthday Cheat Meal. I do not believe in anyway, that this is a clean eating recipe! Smile

Hey guys!

So, my birthday is tomorrow (April 6), but we’ll be pretty busy…so I decided to do my cheat meal today. A Philly Cheese Steak Sandwich! I’ve actually NEVER had one before! Shocker…because this one tasted so good! I don’t know why I’ve never eaten one. But this homemade sandwich was perfect! I’m just like in awe how mouthwatering meat and cheese sandwiches can be. Haha! There’s a foodie for ya!

Anyway, I’ll be 19 tomorrow and it will be my last teen year! Next year I’ll be 20!!! Oh gosh!

I started this blog when I was 17, 4 months before I turned 18. So weird how time flies by so quickly. I’ve definitely learned a lot since then.

If you have a blog…How old were you when you started yours? Has it been an experience? Has it helped you grow in different areas of your life?

Okay, here’s the recipe for the Philly Cheese Steak with step by step directions for your use!

Easy Philly Cheese Steak Sandwiches

(with peppers, onions, mushrooms, and cheese of choice)

Made: 6   Time: 45 minutes   *Not clean eating

Ingredients:

  • 1.5 lbs ribeye steaks (sliced thinly and then chopped roughly)
  • 6 hoagie rolls (Used the Publix hoagie rolls—really good)
  • 2 medium bell peppers
  • 1 large white onion
  • 8oz package of mushrooms (sliced)
  • 1-2 tbsp KerryGold grassfed butter
  • salt & pepper
  • garlic salt
  • 12 slices of provolone or muenster cheese

Directions:

  • Preheat oven to 250 degrees. Layout a pan with 6 pieces of foil large enough to wrap the hoagie with after its been stuffed.
  • Heat a large skillet medium/high with 1 tbsp or so with butter. Slice the mushrooms, onion, and bell pepper thinly and cook in the skillet. Season with salt, pepper, and garlic salt.
  • While the mushrooms, onions, and bell peppers are cooking…thinly slice and chop the meat and start cooking in another large skillet with 1-2 tbsp of olive oil. Season with salt and pepper.
  • Then I moved the cooked meat in to the skillet with the cooked mushrooms, onions, and peppers.
  • I took three portions (or you could just do 2 portions) to add to the empty skillet and heat back up. Lay 2 slices of cheese onto each portion. Let it slightly melt and then add it to the sliced hoagie roll and wrap each one tightly in foil. Repeat, till you have all the portions heated up with the sliced cheese and wrapped in foil.
  • Place all the wrapped hoagies on a pan and place in the preheated oven for 5-10 minutes or even up to 15 minutes (if you aren’t in a hurry) to get the hoagie roll warm and soft and the cheese melted all the way.
  • Take out and bon appetit!

I’m going to go enjoy the rest of this beautiful Saturday! Enjoy the recipe!

Spring & Summer Long Run Tips (Why We Run Long)

Good Morning friends!

Okay, so I don’t know about you, but here in Alabama, the weather starts getting really warm (in the 70s & 80s) in April and May! And that means, my runs are going to be crazy hot and sweaty ones.

I narrowed down some of my top tips for running surviving in the heat:

  • Always bring an extra water bottle(s)

  • Eat enough carbs (for your mileage). Not all at once and don’t overdo it. I usually have a good lunch the day before, eat a little light for dinner, then I eat a couple of Kashi Waffles with nut butter,1/2 banana, & chia seeds for breakfast 90 minutes before I run. but that’s just me…Find what works for you! • Always bring coconut water with you and keep it in a cooler or lunchbox

(Here’s a link to a review on coconut water if you’re wondering about it)

  • Bring an extra pair of socks (Especially if you live in the south west or south) You will be sweating tons and we don’t need blisters when running 4-6 days a week!
  • Bring a headband, hat, or a cooling towel—- I usually bring all of them!IMG_20130907_210042
  • Sunscreen! (Preferably an organic sunscreen that’s good for your skin)

Sport SPF 50 Unscented Sunscreen Spray

  • A group of friends (Ones that run) –You will be very happy on a 12 mile run if you have a couple or more people running with you. There have been too many long runs where I start thinking I’m just a crazy weirdo because I don’t see anyone else running this long and fast at 6:30 in the morning
  • Listen to your body! Sometimes a 12 mile long run needs to turn into a 9 mile long run (Actually happened to me last week!!!) Or if you’re a marathon junkie, don’t beat yourself up because you can’t get that 15 or 18 mile long run in. Plan carefully

I love this quote!

Why long runs are good to do once a week:

Here is a great article if you are wondering… LONG RUNS

I hope to share a few more tips here and there this summer as I get into the hot, hot long runs!

Juicing again this morning to start the day off right! The energy and clarity I get intaking fresh juice first thing, is simply amazing!

Question of the Day:

  • Do you like juicing? If so, what’s your favorite combination?

Bible Verse of the Day:

Hebrews 12:2 (KJV)

2 “Looking unto Jesus the author and finisher of our faith; who for the joy that was set before him endured the cross, despising the shame, and is set down at the right hand of the throne of God.”

Finally! I’m Back!

Okay, so I’ve been gone since January and it’s been a pain!

20140319_14201320140319_14200820140319_142016

I came home from a conference in Atlanta in January and my laptop (of 5 years) would not turn on! My brother, a computer whiz, told me it was not going to ever work again (sad) and the laptop was NOT worth any fixes. As soon as I heard those words, blogging was the only thing on my mind. I need my Windows Live Writer!!!! It’s not that much fun of an experience to blog on my Samsung Galaxy. I tried…didn’t go so well.

Anyhow, my birthday is in 3 days, and my wonderful parents, brother, and grandmom gave me an early gift! When you get older, you really only need 1 thing and 1 thing only. So, laptop it is! I’m very, very, thankful!

I got an HP-Pavillion 17” laptop with Windows 8….and it is AMAZING! I hope it stays this awesome for 5 years or so!

I’m just really glad to be back on the blogging wagon. Being stuck in the mud for 4 months is so crappy!

ENOUGH! Let’s get onto some food and workouts! Oh, and a little update on IIN.

Dinner

For last night’s dinner, I found this recipe on Pinterest and not only did I Pin it, I actually baked it! I made a couple of changes like…omitting the bacon and changing the Gruyere cheese to Parmesan. Mine didn’t look as fabulous as Lindsay’s though Sad smile

School has been great so far. I’m only on Module 8 (week 8), but so far, so good! I love all the videos, assignments, and quizzes! And I’ve been taking lots of notes and stuffing them in this note journal.

This time next year, I will be 8 weeks out of school and helping others live out a healthy lifestyle! Gonna be the best job ever! Such an exciting thought.

Bible Verse of the Day
