Happy Hump Day…and What I Ate Wednesday!

I haven’t done one of these since before my blog break so I’m ready to FALL into good habits! Thanks Jenn for hosting : )

What I Ate Wednesday: FALL into Good Habits

BREAKFAST

For breakfast this week, I’ve been on a green protein smoothie kick! It’s literally so good and energizing for the morning.

  • Almond milk, water
  • 5 frozen strawberries
  • 1/2 of a banana
  • 1/4 avocado
  • 2 handfuls spinach
  • Cinnamon
  • 1 serving of Orgain Organic Plant Based Protein powder

After some work on the computer, I got ready to workout.

  • Easy 2 miles with 6 sprints at the end
  • HIIT workout from Tone It Up
  • 5 minute plank challenge  (JOIN ME FOR 14 DAYS OF CORE WORK!)
  • 4 move workout focusing on legs/booty

LUNCH

I wrapped Boar’s Head sliced turkey, sliced cheese, and arugula together with a side of fresh veggies

Then it was time to head out for a meeting

Wild rice, peas, and sautéed turkey and peppers…simple and delicious!

WIAW 7/2 Exceptional Eats and a Workout

Happy What I Ate Wednesday, foodies and readers! How are all of you doing?

Yesterday, was like a very exceptional day of eats. Like really exceptional! Do you ever have those days where you just love everything you ate by the end of the day?

Thank you, Jenn, for hosting the linkup! And I wanted to give a shout out to her awesome Coconut-Lime Avocado Muffins she posted yesterday! Those muffins look really good and I love the twist on the ingredients. Never would have thought to put those together!

Peas and Crayons

I started my day, waking up early to get some food and coffee in me before my run. I decided on something easily digestible, Kashi Autumn Wheat Biscuits with a little granola, handful of plump blueberries and Silk Unsweetened Almond Milk! Kashi’s wheat biscuits is one of my favorite cereals they have. Actually, I love all their cereals!

As soon as I finished my blog post yesterday, it was time to run! I got ready to head on over to a new but old place to run. Its local but I rarely ever head over to it…mostly because it’s not that big. But there is a soft gravel trail and that’s what I really felt like doing today.

One of the wonderful things about woodsy trail runs, is the shade! YES!

I ended up walking a mile, after running 3 miles, to this little area that was so peaceful. I posted a video of it on Instagram yesterday!

I also did a workout a little while later that was really good and I MUST SHARE!

Just so you know, I have WAY too much fun designing workouts and making them look pretty on Picmonkey!

TOUGH IT OUT WORKOUT

For post workout LUNCH, I was craving some weird combos! I had a hankering for my leftover sautéed broccoli, my dad’s homemade sauerkraut, pickles, a plum, and organic bread with a little organic PB and honey! Oh my, so good! Or maybe it’s just me…

After lunch, I received my book that I’ll be reviewing on the blog once I’m done with it, thanks to Blogging For Books. By the way, if you really like to read (anything from fiction, cook books, business, mysteries, etc.) and you have a blog, check out Blogging for Books. I think this is an amazing opportunity for anyone looking to widen their range of posts on their blog! Plus, you get a free book!

I picked this book since I’ll be starting my own health coaching and personal training business/studio one day soon in the future as a young woman. I’m very blessed with my career choice and thankful for all the support I receive and with that support, it really just makes me want to be 10X better! My passions are health and fitness and my goal is to help others become healthy and reach their goals. But at the same time, I’m not in business school, so making sure I know how to run my future business without business schooling, is really important to me. Taking everything in like a sponge right now!

This is southern. And I am not ashamed of eating mashed potatoes. I know they aren’t the healthiest thing on the menu, but goodness, when you haven’t had them in a while, they sure are good!

WIAW 6/25 + Pancakes Recipe

Good morning and hope all of you are well! I can’t believe it’s Wednesday already, but I love Wednesday…it’s halfway to the weekend AND its WIAW!! I had a pretty good day in eats yesterday…what about you? If you have a WIAW post, make sure to comment down below so I won’t miss it! I love checking out everybody’s delicious eats!

Delicious, delicious pancakes that I happened to just throw together and they came out alright! I’ll post the recipe…but I’ve only made it once!

I shall call them Banana Chia Oat Pancakes

Ingredients:

  • 1 mashed medium ripe banana
  • 1 egg
  • 1/4 cup oat flour
  • 1 tsp maca powder
  • 1 tbsp chia seeds
  • 1/4 tsp baking powder
  • 4 drops lemon stevia
  • dash of cinnamon

I was finishing up some videos and slides for school and there was a whole thing on protein. There are so many “do this” and “don’t do this” when protein is the subject but really, it all comes down to the individual. I believe so much in bio individuality and my dream is to help more people in this world understand it! But back on protein, when you eat meats, you really should eat heaps of vegetables with it to help break down the protein which leads to better digestion. And oh my goodness, I see too many people eat meat and potatoes and no leafy greens or rainbow colored veggies! It’s extremely vital that you pair foods together that work well with digestion. Alright, enough about proteins!

If you didn’t know, we have a huge garden in our backyard…well, not HUGE, but big-ish. Anyway, here in Alabama, fried green tomatoes and squash are like the thing in the summer. So, we picked green tomatoes and the few squash we had and cooked those bad boys right up! Oh wow, so many memories growing up eating fried green tomatoes and squash. So darn good!

All I did was slice the tomatoes and squash and pat them on both sides in organic corn meal, salt, and pepper. And to fry them, olive oil is your friend. You can also do coconut oil…but I used coconut oil on the Lean Curry Burgers.

Again, not the healthiest, but hey, I don’t eat this very often.

That’s fried squash…in case you can’t tell. It’s not the prettiest, but hello, it tastes super amazing.

Got my plate full of veggies: sautéed swiss chard (from our garden), organic garbanzo beans, raw bell pepper, fried squash and green tomatoes.

Protein: Lean Curry Burgers! Recipe comes from the very creative Arman @ The Big Man’s World! These were very different from what I’ve ever made with organic beef but they were superb. I love curry and this definitely hit the spot!

And here’s the pictures of my garden…I got out in the wet grass this morning to take these, so please enjoy!

We’ve planted:

  • 2 kinds of swiss chard
  • spinach (but not it’s too hot for it to grow anymore)
  • basil
  • KALE!!!
  • potatoes
  • tomatoes
  • squash
  • carrots
  • spaghetti squash

And probably some more stuff that I don’t know about since my dad does most of the work!
