Lara Bar Review

Hey guys! Wow, it’s Wednesday again?

How does this happen?

But, you know what, it’s totally fine because I love What I Ate Wednesday! And I’m taking WIAW in a little different direction today by reviewing something I received in the mail last week! LÄRABARS!

Alright, I don’t know about you, but LÄRABARS have been some of my favorite when I discovered them, which was about 3 years ago, and having the chance to review them, makes me extremely happy.

Thank you to Jenn for hosting WIAW for all us foodies! Let’s get on the review, shall we?

LARABAR Review

Roasted Nut Roll: Sweet, salty, fruity.

My thoughts: This is one of those bars that I crave when I’m hiking and it’s definitely one of those bars I could eat A LOT. Because…it was delicious! I wanted more ❤

Apple Pie: Tasted just like apple pie

My thoughts: The taste was wonderful! Not too sweet but still tasted like apple pie. This bar could easily be rolled out and baked on top of a gluten free (homemade) miniature crust and VOILA, you’d have your own healthy apple pie. Actually, I think I’m gonna get on that.

Lemon Pound Cake: Fruit and nut bar

My thoughts: Um, lemon is one of my favorite flavors and they definitely got spot on with this bar. Lemon Pound Cake in a package, a few ingredients, and healthyyyyy? Yes, please, don’t mind if I do!

Nut Butter Chocolate: Perfect amount of nut butter and chocolate

My thoughts: I’m saving the best for last! This was my favorite bar! Oh my gosh, I can’t even… It was just way too good! I ate it while I sipped on my coffee, and I gotta say, I needed another one! They probably don’t know this, but I’m like the biggest fan of nut butter and of chocolate, so when they put these two together and created a bar, I was mind blown with the first bite! Anyone else a big fan of NB and Choc. together?

Another great thing about these bars is that they’re kind of small. Which, makes it easy for me to throw in my purse, pocket, lunch box, laptop bag, etc. Even though, I’d love these to be bigger so I could enjoy it longer, I do realize there is a good amount of calories in each one. These are not 50 calorie bars or anything! This a very high nutrient dense bar so don’t get too carried away. But totally, enjoy them!

A Day of Clean Eats

I’m jumping right into What I Ate Wednesday today, so thanks to Jenn for hosting! And let’s get the ball rollin’!

Peas and Crayons

As a foodie and someone who’s gotta run early, breakfast is the first thing on my mind when I wake up. The night before, I washed and chopped up a lot of celery that needed to be juiced so, I quickly grabbed some greens and a couple of carrots to add to the celery. It was delicious!

About 20 minutes later, I grabbed some boiled eggs (prepped the night before) and a handful of Cascadian Farm cereal. I stayed full for hours, it seemed. Eating good proteins, carbs, and having energizing juice in the morning really keeps me going.

After breakfast, I went running 3.25 miles. Warmed up nice and easy the first 2 miles and then 6 crazy hill repeats, then ran till I got home!

Then I completed 3 rounds of that arm workout!

Yep, super sore this morning…

WOD: 2 miles at 9:30/mile pace, 20 minute free motion cross cable workout (target quads, back and arms), 9 min mile, 30 push-ups. Lacking energy, glad it's over.

Lunch was kind of too early for me, so I ended up not eating any of those chickpeas or the avocado. It just looked unappetizing as soon as I sat down to eat.

IMG_20140722_114939

So I replaced the chickpeas and avocado with a baked quest bar because…who wouldn’t?

IMG_20140722_121914

And I tried to take a decent picture of my dinner, but it was rainy outside and the lighting just sucked…so yeah, this is what you get stuck with.

Organic Whole Wheat pasta, meat sauce, lots of fresh basil, and baked parmesan artichokes!

Alright, you guys! That’s about it!

Question timeeeee:

  • What did you have for breakfast yesterday?
  • What do you like eating with your pasta?
  • What was your workout yesterday?

{Gluten-Free} Coffee Granola Clusters

Happy Friday, friends!

Yesterday, I was in the kitchen hoping to make a cookie recipe I was brainstorming, but that’s going to have to wait. I ended up wanting to make granola clusters! But not just plain ole granola clusters. COFFEE granola clusters!

Yep, that’s right. Coffee flavored! I had some freshly ground up coffee and I thought to myself, “This would be perfect!”

So, with a little this and a little that, I had a recipe and I just needed it to bake!

I introduce, Coffee Granola Clusters

Coffee Granola Clusters

Directions:

  • Preheat oven to 350F
  • Combine all dry ingredients together
  • Then add all the wet ingredients to the dry
  • Mix well
  • I did about 1 1/2 cups of rolled oats but you could do less or more
  • You may have to add more honey or more oats, just play around with it. It should fall apart but still have a rather sticky texture to it and clumps should form
  • Spread on a greased baking sheet
  • Place in oven for 15 minutes
  • Turn the granola clusters over to keep from burning
  • Place in oven again for 10-15 more minutes (keep an eye on it)
  • When finished baking, let it cool for 10-20 minutes before eating
  • For keeping, place it in an air tight container

The chia seeds make an excellent addition to this recipe!

The combination of coffee and cinnamon is divine!

The sweetness of the honey and maple syrup add to the coffee flavor which makes each bite taste like Heaven!

This is a recipe for those who love fresh granola instead of packaged! I promise, this will taste so good!

I actually had to force myself to stop eating it. It’s kinda amazing, if I do say so myself.

Let me know…what’s your favorite: GRANOLA or GRANOLA CLUSTERS
