One More Day

Good morning everyone!

I seriously can not believe that Spring Break is over. Not cool, man, not cool.

Today is the last day I have and then its back to the learning. Nope, I am not cheerful.

Oh, by the way, I’m pretty sore from yesterday’s workout.

Dinner

Lastnight was possibly the best dinner ever. Okay, not reallyyyy, but oh my goodness, it was delicious, thanks to Costco.

We picked up these Thai cabbage, chicken, and almond wraps and they were delicious. You might have seen it on my Instagram last night (which you can follow me over to the right on the sidebar!!! Yay!)

We served ours along with Asparagus sautéed in coconut oil! Plate

Okay, so totally a repeat from yesterday, I enjoyed some delicious 2 ingredient pancakes! With grape jam melted this time, instead of blackberry.

Good Run, Good Eggs

A good run will get me back into gear.

Just saying.

I have ran about 4 times since my half marathon which is not how I intended for things to go. I was supposed to jump right back into training after about 4 days. I lost motivation to run and got sucked into my at-home crossfit workouts, weightlifting, HIIT, burpee challenges…which is fine, I suppose.

But I actually really started to miss running. I have about 5 weeks till my 5K, so it is training time…hehe.

Workout (Lastnight)

  • 1 mile warmup
  • 4X800m with jogs in between
  • 4X200m with jogs in between
  • 1.5 mile cool down
  • 6 miles…booyah!

I felt so good after this run…tired…but good.

Post run, I had some coconut water to try. I LOVE coconut water. Vita and Zico are my favorite brands out there. I tried this flavor lastnight…um, can I just say that I could live off of this? Because I could. It is heavenly!

Breakfast

This morning, I just had to have eggs again but I fried them. I haven’t done this in a while. They were pretty good. By the way, these eggs are cage free eggs. The best!

And we have about a gazillion packages of whole wheat blueberry kashi waffles in the freezer because Costco…had them on sale. So I toasted some up for me and my sister this morning. DelightfulSmile

I’ve got lots of work to get done today so I probably won’t post again till tomorrow, just giving anyone reading my blog a heads up.

By the way, I made an A on my math test.

Fire? Just Kidding

So for the past couple of days, its been really cold, so we decided to have a fire in the fireplace.

Well, my parents were leaving and saw the smoke on the outside of the house coming out like as if there was a fire in the upper part of the chimney. So, just to be on the safe side, my dad called the fire department.

Oh dear.

Well, for some reason, when its really cold the smoke will look like it isn’t coming out right. But it was. False alarm I guess.

Awkward.

It’s always weird to have fire trucks come to the neighborhood and stop at a house because, naturally, your neighbors are like, “Oh lookie over there, I wonder what’s going on! Oh my goodness”

And so, it happened to us.

This morning I rolled out of bed motivated! Anyone else? Plus I had a beautiful view this morning…

Breakfast

Instead of 2 boiled eggs, my taste buds decided to go towards some scrambled eggs in coconut oil. And I have to eat some sort of carb in the morning so I got a handful of my favorite crackers. Completely gluten free and full of the best grains/seeds like quinoa, amaranth, chia, flax..etc.

And of course, a big ole cup of coffee. Gotta have my coffee.

And you also know that I’m excited to only have 9 more days of school left. Andddd I just noticed I have my ring on my left hand. Weird. Definitely supposed to be on my right hand.

Lunch

I had 1 small potato and a leftover salmon cake…and skipped out on the spinach because I knew I was having a big salad tonight. And this was simple…I like simple lunches.

I came home and ate a snack thinking I was going to go for a run ASAP…but I had some stuff to catch up on and have postponed my run to tonight. Gonna get it done though!

I did have some delicious tea and would like to share with you. You have to get these two teas. They are perfect together. Mix in some stevia and you are so set with a scrumptious cup of tea.

Salad! With leftover sautéed chicken, some chopped veggies, and some sautéed broccoli.

And my mom made croissants with chicken in them, but…they aren’t exactly clean. So I had a small one. I used to eat these a lot as a kid, but I really don’t care for them as much because white dough doesn’t seem to appealing to me anymore.

Anyone else out there completely change your outlook on bread? I rarely eat bread with gluten in it but when I do, its always whole wheat and everyone once in a while.
