Cauliflower Crust Pizza Recipe

Good morning and happy Friday!

For today’s Food Friday post, I’m talking pizza.

I posted this on instagram and the blog yesterday from Wednesday’s dinner…

Gluten Free Cauliflower Crust Pizza      Adapted from How Sweet Eats

With Onions, Peppers, Mushrooms and Basil                  Makes 2 Pizzas

Here are my ingredients. Similar to Jessica’s       (Click How Sweet Eats for directions)

  • 2 heads of cauliflower
  • 2 packs of Sargento Mozzarella Shredded Cheese
  • 1 pack of parmesan shredded cheese
  • Can of marinara (check the ingredients and make sure there isn’t any added sugars or HFC in it)
  • Pre diced purple onion
  • Pre sliced mushrooms
  • Pre diced bell pepper trio
  • Basil, Chopped finely (I used basil from my garden)
  • Italian seasoning
  • Red pepper flakes
  • salt
  • pepper
  • garlic powder
  • 1-2 tbsp almond flour

– Made one pizza out of one head of cauliflower and another pizza out of the other head of cauliflower. I made identical pizzas though!

– I sautéed the bell pepper, onion, mushrooms and basil and let it cool before adding it to the top of the pizza.

Breakfast:

Good ole overnight oats!

But I learned something awesome—- if you slice some banana in with the oats overnight, the oats will taste like banana bread! So good!

I also snuck in a handful of Cascadian Farms Cinnamon Crunch (similar to cinnamon toast crunch!!!! Just not as sugary)

Workout:

Warmed up a mile (kinda fast) and then didn’t feel good afterward at all.

After 30 minutes, I decided to tough it out finish what I started…Chest and Triceps had to be worked!

Then after they felt like jelly, I knew I was through! Got in a good sweat sesh even though my calorie wasn’t high or anything. No problemo

Lunch:

Flat out sandwich with chicken breast, lettuce, and laughing cow cheese wedge, some Crunch Master gluten free crackers, and I had muscadines later!

Had an owl visit us by the kitchen window…he saw me!!!

Dinner:

Black beans, rice, 1/3 of a sweet potato, chicken, broccoli…and yesterday was National Cheese Pizza Day…ha ha! #absaremadeinthekitchen y’all!

Food Friday: Chicken Apple Sausage Tacos!

Good morning, it’s Friday!

Which means its Food Friday…which also means I can share with you a delicious taco recipe.

Chicken Apple Sausage Tacos                            Time: 30 minutes

Ingredients                                                                                        Makes: 8 Tacos

  • Smart & Delicious Mini Multi Bran Soft Wraps
  • 1 package Chicken Apple Sausage (CAS)
  • 1 package shredded cheddar or shred your own (2 cups of thick shredded cheese)
  • Shredded Iceberg Lettuce
  • Chopped Cilantro
  • Sour cream
  • 3 avocados (made into guacamole)
  • Salsa
  • Sweet Potato Fries (if you want a side)

Directions

  • Heat a skillet on medium high with olive oil. Slice the sausage thin and long ways for a shredded look.
  • Saute the sausage for 10-12 minutes. Make Guacamole while sausage is cooking!
  • Turn oven on Hi Broil
  • Create tacos (pictures below)
  • After you make tacos and they are packed in, place them in oven for 2 minutes until tops of tortillas are crispy and cheese is melted.
  • Sour cream, cilantro, and salsa on top!

Food Friday: Protein Pancakes

I love pancakes. And I love protein pancakes even more. They are delicious. Plus, full of protein…obviously.

Here’s what I usually put in my pancake:

  • 1/2 banana, mashed
  • 1/4-1/3 cup of liquid egg whites (or 2 egg whites from eggs)
  • 1 scoop of protein powder
  • 1 1/2 tbsp. of ground organic flax seed
  • Splash of vanilla
  • Dash of cinnamon
  • Dash of Stevia
  • Dash of baking powder
  • Blueberries and/or almond butter for the topping

Tina has an awesome post today about workouts that multi-task and thought I should share. Like, I need to do some of these. It makes sense to exercise while you brush your teeth…I mean all you do is stand there. So, why not do some calf raises!
