What I Ate Wednesday 4/9/14

Anyone used to writing 2014 yet? I still find myself writing 2013 on most of my stuff. I just can’t believe it is 2014! It’s crazy…

On the other hand, HAPPY WIAW! I haven’t done a WIAW in months, so I’m happy to be doing them again. Thanks to the wonderful Jenn for making it possible for all us bloggers to link up! Smile

Breakfast

I started out with an extremely tasty, thick, and energy filled green smoothie that was heavenly…secret ingredient was the xanthan gum!

Ingredients:

  • Almond milk
  • Spinach
  • 1 frozen banana
  • 3 frozen strawberries
  • 1 tbsp ground flax seed
  • 1/2 tsp xanthan gum
  • 1 tsp Barley grass juice powder
  • 1 inch of organic ginger root
  • 1 scoop of Jarrow Formulas Chocolate Protein Powder

 

Lunch

Grilled Chicken salad with berries, apple, granola, nuts, and vinaigrette

Dinner

I topped off my food for the day with the rest of the Caribbean Coconut Talenti Gelato from Sunday!

I was dreadfully sore from Sunday’s hard run in the rain and leg workout today! The foam roller is my best friend Smile

But I think this 5 miler helped loosed my legs some…so that’s good

Healthy & Easy Homemade Applesauce

I woke up this morning with the idea of making applesauce with the gala apples that had become soft. So I jumped out of bed (funny, right?) to start on the sauce.

I actually didn’t intend this to be a blog post, so I didn’t take pictures of chopping and cooking.

I washed, peeled, and chopped apples into large cubes and tossed them into my blender till it reached 6 CUPS.

I then, using my blender, pureed the apples with a little water. If I had a food processor, I would not have had to add water.

After all the chopped apples were pureed, I added it to a pot of 1/2 cup of water, 1 tsp of cinnamon, and 1/8 tsp of cloves. I turned it to medium high heat and waited for it to come to a boil. After a couple of minutes, I turned the heat down to medium low and let the applesauce simmer for 30 minutes.

DONE!

Store in a glass container like a mason jar.

Ingredients

  • 6 cups chopped apples; washed and peeled
  • 1/2 cup water; plus a little more if you are pureeing in a blender like me
  • 1 tsp cinnamon (more or less)
  • 1/8 tsp ground cloves

 

Need

  • food processor or blender
  • pot

Reasons I would rather make my own applesauce:

  • No added sugar
  • No added preservatives or artificial flavoring
  • No high fructose corn syrup
  • I know exactly what I’m putting in it
  • Tastes great on all my breakfast foods and  most snacks
  • A way to get rid of soft apples Smile

Rain, Rain, Go Away!

Good morning and Happy Tuesday!

I don’t know about you, but where I am over here in Alabama, it has been raining like crazy! I guess that is a good thing if you are a gardener, farmer, or something of that sort, but when you are a runner…it is the last thing you want to happen.

Rain messes up schedules and I like to keep my running on a schedule when I’m training. So, I sure picked a fine time to start marathon training. Boo.

Breakfast:

Yesterday I had one of my favorite breakfasts. The Sweet Breakfast Scramble from Tina @ Carrots n Cake but I used sweet potato instead of acorn squash.

An hour or two after eating, I slipped on my running clothes

I got in a fabulous 2 mile run. I’m having to pick it back up slowly, which I’m fine with because this girl doesn’t want injuries. Just pointing that out because 2 miles doesn’t really sound like marathon training HAHA.

After my run, I went to do some suicides in my driveway. I love doing suicides because they are a high intensity training exercise so they get your heart rate up super high!!! Which is a plus!

Lunch:

Wanted a light lunch and had leftover chicken, tomatoes, cornbread, and half of a very small sweet potato.

Later that night I was going to go run at the track and get some speed work in, but it was raining! UGH!

So, I opted for a fun workout.

  • I warmed up with the Purely Twins 5 minute plank workout
  • Completed 4 rounds Purely Fit 14 (my back is super sore!)
  • Completed 4 rounds of *overhead press, barbell curls, lateral raises, front raises, hammer curls, upright row, and all around the worlds. I also went up on the weight the last 2 rounds to really feel the burn!
  • Completed 3 rounds of the Tone It Up Best Circuit Workout
  • Stretched

 

Dinner:

Made a quick Hummus Turkey Spinach wrap with a couple slices of avocado

Then I watched Australia with my family. Love that movie…and Hugh Jackman Winking smile
