Taking a Break

Hey loves!

I took a break over the weekend and yesterday to just step away from the blogging world. I was in it all last week and I knew my brain just needed a break. It still does, but I thought I would pop in and blog just a little.

Friday we headed over to Costco and Earthfare to do a little grocery shopping…and we also stopped at Jason’s Deli to devour their salad bar.


Look, their salad bar rocks…its got all kind of stuff.

And every time we go to Earthfare, we get a cold Zevia to drink on the way back home. It’s just a thing.


Saturday I decided to spend my weekend eating clean whole foods…and that is what I did.

I started with a spinach, kale and banana smoothie and then a really good workout!

Lunch I had yogurt and almond butter with apple slices.

Then I took my sister to Forever 21 to find her a dress for homecoming.

When I got back my older sister and her husband were at the house.

While everyone else was eating hot dogs, I ate broccoli, eggs, peas, and onions topped with sauerkraut

Church was just so, so, so powerful Sunday. So happy I was there!


Lunch/dinner was pretty great…mostly the same at Saturday’s except no egg, but chicken!

So not a super special weekend or anything except I’m quite proud of myself eating so clean over those two days. I’m actually still doing it because I began to feel so good from all the veggies, fruits, and good proteins, no packaged crap.

I’m still drinking green smoothies and eating lighter. Except I might have had my fair share of almonds.

Happy What I Ate Wednesday!

I started my day off with overnight oats! I was actually going to start my day off with a run and then eat my overnight oats…but plans change!

I had cinnamon overnight oats with chia seeds, almond butter, and half of a banana.

Overnight oats never get old, you guys.

Right after I ate, I got ready to go shopping with my sister and mom. My sister, Lydia, is going into 8th grade and we headed over to Kohl’s and found her some really cute back to school clothes. Thanks Lydia for letting us pick everything out! HAHA! I love making outfits for other people!


After two or more hours of shopping, we forgot about lunch, so we drove to Jason’s Deli to eat a light organic late lunch!

I got the Spinach wrap with mushrooms, avocado, cheese, cilantro, chicken, and salsa. Fruit on the side!

I’m not going to lie, I had a little of the free soft serve ice cream they have that’s for free. Did not take a picture because it took me like two seconds to eat. Sorry.

Oh yeah, It was Left Handers Day yesterday! (I’m obviously a lefty, so that’s why I celebrate it)

After eating, we walked to The Fresh Market (best place ever) and sampled some organic coffee while we grabbed a few things (including dinner)


We wanted roasted chicken so that is what we got. And cornbread

We had baked sweet potatoes at home so we had a pretty good meal!

We sat around the dinner table talking and laughing away for probably an hour!

We were looking up name meanings and this is what Audrey means: “noble” + “strength”


I want to thank Cocozia Coconut Water for sending me samples to try out!

I’m really excited because coconut water is so good and good for you. I workout and run so much that I usually always have it on hand. Its helped me out a lot.

I will be letting you all know how good this stuff is!

Gluten Free Organic Waffles

My dad whipped up some protein filled waffles with all my favorite flours in it. They were so good and the texture was perfect! So, duh, I have to share!


  • 1/3 cup Arrowhead Mills Organic Brown Rice Flour
  • 1/3 cup Arrowhead Mills Organic Oat Flour
  • 1/3 cup Arrowhead Mills Organic Buck Wheat Flour
  • 1/3 cup Bob’s Red Mill All Purpose gluten free baking flour
  • 1/4 cup Organic ground flax seed
  • 2 eggs
  • ~3/4 cup Unsweetened Vanilla Almond Milk
  • 1 1/2 Scoops chocolate Designer Whey protein powder
  • 1/2 tsp. Salt
  • 1 1/2 tsp. Aluminum Free baking powder


Mix the dry ingredients first! Then place the milk and eggs in the dry ingredients. You can make these into pancakes or waffles…I did waffles! Get some olive oil spray, PAM, or coconut oil (that’s what I used), and cover your waffle maker with it or your skillet. Medium heat. Pour 1/4-1/3 cup of batter for pancakes or put enough batter to fill waffle sections.

And eat! And this is the only picture I got. I was starving. I ran first thing this morning on an empty stomach.


And I have to share my awesome TACO SALAD from Jason’s Deli lastnight! Perfect organic meal, and I still have leftovers!
