3 Ingredient Sweet Potato Flatbread

Sweet Potato Flat bread

Today, I want to share my version of Sweet Potato flatbread!

After browsing through flatbread recipes on pinterest, I remembered I had some leftover baked sweet potatoes in the fridge. I immediately thought of a recipe off the top of my head.  So, when I got up yesterday morning to make breakfast, I got started on the flatbread. Its SO easy, which is making me love this stuff even more. I can’t wait to make it for my turkey burgers or deli sandwiches!

Okay, let’s get to this recipe!

Sweet Potato Flat Bread #290909090909


  • Preheat oven to 350F
  • Simply beat the eggs with a hand mixer in a large bowl.
  • Add the cup of baked sweet potato (room temp)
  • Mix again
  • Add the coconut flour
  • Mix again
  • OPTIONAL add ins: 1/2 tsp vanilla extract/stevia/cinnamon/baking powder
  • The batter should be a little on the thick side. If it’s still too wet and not holding together, add a little more coconut flour a tablespoon at a time.
  • On a pizza pan, arrange parchment paper on top.
  • Grease the parchment paper (I used 1 tbsp of coconut oil and it melted as soon as I started spreading it in a circle)
  • Spoon the sweet potato mixture onto the greased parchment paper and beginning forming it like you would for a flat pizza crust. (This may take some time)
  • And bake for 25 minutes!

I ended up adding a yogurt/almond butter/stevia mixture on top of my flat bread with some sliced banana!

I hope you can try this out next time you decide to bake some sweet potatoes! It really is delicious! Great for Fall, I must say. I added a little vanilla and cinnamon and it tasted so good! Can’t wait to make more!

Thursday Thoughts 8/22

Good morning!

I started my day early, early and had a good ole’ protein pancake made into a pancake bowl. Yum, yum yum. One of my favorite breakfasts to have.

Yesterday morning, for some stupid reason, my link wouldn’t post up to Jenn’s WIAW post and I sat for literally two hours trying to find out how to create a backlink…which was what I was missing. What in the world is a back link and why did my post decide not have to one?

So my workout was kinda thrown out the window…but guess what, that’s okay! Don’t fret, don’t stress, it’s not the end of the world!

I ate half of a chocolate chip Quest Bar and got ready to go do some job searching. I found a place I think might be something I could do but right now, I’m deep down focused in what God has planned for me and I’m believing he will reveal it to me.

1. Ask: Ask Him to guide you.  Talk to God.  Even if you’ve never talked to Him before ever in your life (yes, talking to “air” can be weird at first), He’s pretty much the best listener.  Ask for Him to show you what to do.  Praying and talking to Him in prayer is just like building any other relationship (except God never fails us like all humans can) so it takes time.  Give it time.  First dates can be awkward but a first date can turn into a beautiful marriage and a family after many soulful conversations.

2. Seek:  Read the Bible.  If that sounds overwhelming, just start somewhere small.  Reading Mark is a great quick way to get to know Jesus’s story.  You can also listen to the audio version, which I do a LOT (when I am walking in the morning with Grace, while I clean the house, in the car, etc).  I love the New Living Translation’s audio here.

3. Knock:  Do something.  Act on the good that God puts on your heart.  When you seek Him, he will open doors you never thought possible (and some you didn’t want Him to open), but there are amazing adventures that await you.

But I’ve read it over and over again because its just so true.

After I turned my resume in, I had to make a quick stop to Whole Foods!

I picked up some stuff like a couple of apples, So Delicious Coconut Creamer (which is divine for my coffee right now), Zevia (omg), mint chocolate chip Arctic Zero (mouth watering), and some cilantro (needed it for dinner).


I came home after a lot of driving, and coffee time it was! Which means, after coffee, we ate,and after we ate, we went for a 2 mile walk in the humidity.

Thursday Thoughts

  • If you work in a store and a customer asks about applications, don’t be rude or give off bad vibes. I went to this cute clothing store to give my resume, but long story short, I just felt like they didn’t want me there.
  • Everyone at Whole Foods is either actually healthy and all their favorite stuff is there…or people go because they think it will make them healthy eating organic teddy grahams.

  • I’ve been having so many ideas come into my head that I’m overwhelmed. Had an idea about starting my own little bakery (not in an actual building), had some ideas for Southern Weddings Mag, had some ideas about after I become a certified PT and health coach…oh my goodness just so many ideas!

  • There is actually sun shining right now…it’s been cloudy since August 11th. Oh my goodness
  • Really into trying new coffee flavors lately!
  • Been enjoying a little cream in my coffee, not something I’ve done in like 2 years
  • Everyday, I think about all the ways I can help people make healthier choices. Just want to help!

VLOG IN SEPTEMBER!!! Don’t Forget!

Good morning! I thought (hehe) I would have a Thoughts On Thursday post today so let’s get to it…….After we take a look at a recipe


OMG Clean French Toast Sticks

  • 2 Slices of Ezekial Bread
  • 1 egg
  • 1/4 cup Light Coconut milk
  • Cinnamon
  • Stevia
  • Vanilla Extract



  • 1 TBSP. creamy almond butter
  • 1 tsp. molasses
  • 1/2 TBSP. organic grape jelly
    • Mix it all together for a dip



    • Spray a non stick pan with olive oil, pam, etc and place it on medium heat
    • Mix the egg, milk, cinnamon, stevia, and vanilla extract in a bowl
    • Slice the bread into strips
    • Quickly coat each side of the bread strips in the mixture
    • DO NOT let the bread sit in the mixture
    • Place strips in the pan and let cook for about 3-5 minutes on each side

2. I found this new magazine company called Southern Weddings Magazine and I am obsessed! It’s owned by a few women in NC and its just so cool!

I love weddings and I love southern weddings even more! So, this magazine will be fun to look through

But anyway, their blog is so cute! I want to talk to the person who is over it

3. I love frozen blueberries! Stick them in the microwave for 10 seconds, and they are perfect!


4. I am completely ready for Fall! I am so tired of this heat! Anyone else?

5. Today is my last day at where I work.

6. Scrambled eggs and toast never gets old!

7. I bought a new purse yesterday for the Fall. Might start wearing it sooner though because its so pretty!

Oh and I can wear it two ways…Sweeeeet Laughing out loud

10. Last night, as I was finishing my workout…

My sister was screaming, “No, no, no!” So I obviously dashed up stairs (which is not the easiest thing when you were thinking about crashing on your yoga mat all night because you were so tired).

The whole kitchen was smoky

She burned QUINOA!


Well, we opened all the windows and doors trying to air it out (it smelled horrible! WARNING: DO NOT burn Quinoa!)

After a few minutes, we closed the doors and I was going to go take a shower. Well, as soon as I’m about to, the smoke alarm GOES off.

Are you kidding me?



I had to throw on clothes, grab my keys and purse and go find my parents. They were running down the other end of the neighborhood. So I had to find them and pick them up. Swish back home and my dad was the only one who knew how to turn off the smoke alarm.

We did however fix everything. Quite an eventful night!Thankful there was no fire haha :0
