Happy Wednesday and WIAW! I had some really Good Eats yesterday…and an awesome clean eating recipe.

I started my morning with fasted cardio in my neighborhood and I was starving by the time I was done.
Breakfast
I made overnight oats the night before, put in a ton of pumpkin spice and cinnamon because its so good, a little peanut butter action on top, and some frozen berries that were thawed!
Lunch
For my second meal of the day, I ate a couple of eggs with hummus on top, a rice cake (not pictured) and half an apple with cinnamon sprinkled on top.
Before I worked my biceps and shoulders, I quickly came up with dinner. We had a package of lean ground turkey so I decided to make meatballs!
Clean & Easy Turkey Meatballs with Cilantro & Mushrooms
Ingredients
- 1 1/2-2 lbs Lean Ground Turkey
- 3/4 cup brown rice flour
- 1/3 cup finely chopped cilantro
- 3 scallions, finely chopped
- 1/3 cup finely chopped mushrooms
- 2 tbsp minced garlic
- 2 tablespoons chopped fresh parsley (optional) I only put a little bit
- 1 large egg
- Coarse salt and ground pepper
- Dash of cayenne and chili powder
Directions
Step 1
Sauté the minced garlic and finely chopped mushrooms in a pan with olive oil.
Step 2
In a large bowl, combine turkey, cilantro, scallions, garlic and mushrooms, egg, 1 1/2 teaspoons salt, 1/2 teaspoon pepper, cayenne and chili powder, and brown rice flour; mix gently with a fork.
Step 3
With hands, form mixture into balls, each equal to 2 level tablespoons; arrange on a skillet with olive oil (medium high heat) to cook 10 minutes on each side.
Step 4
Cover the meatballs with a glass lid for 10 minutes on medium low heat and then they should be ready!
Worked out as soon as I was done cooking! (Biceps and shoulders)
Then it was time to eat! I couldn’t wait to see how these tasted. I loved the cilantro and onion taste together. Made a fresh tasting meatball.
Dinner
I had two of my turkey meatballs, broccoli, quinoa, 1/2 sweet potato with almond butter and a Zevia!
