Peanut Butter Protein Energy Balls

So, it definitely feels like Sunday and not Saturday! Anyone with me here? Also, I hope you all had a great July 4th!

Anyway, before I head out on a run, I wanted to pop in and share with you my protein energy balls recipe that I made on Thursday and you might have saw the picture on instagram

As soon as she bit into the energy ball, she said they were delicious! HIGH FIVE for having taste testers around!

So, I guess what I’m saying here, is that these might rock your socks off if you like peanut butter and maple syrup. I’m in the process of making more of these today so I won’t run out! I wouldn’t share this with you if I didn’t think it was worth it, but it so is! YUM

Alright, let’s move on to the recipe, shall we?

Vega One Protein Energy Balls Recipe

Directions:

  • First, pulse the pecan halves until its created a pecan flour.
  • In a bowl, mix all the ingredients together.
  • Like the picture down below, once it is all mixed, form balls by taking a tablespoon to 2 tablespoons of the mixture and rolling together until it’s taken its form.
  • You can roll these energy balls in crushed up granola or cereal to add a crunch on the outside, if you wish.
  • If not, go ahead and line them up on aluminum foil (on a plate) and place in the freezer for 20 minutes-30 minutes then take out and leave in the refrigerator overnight or at least 5 hours.

NOTE: My gluten free mixture consisted of: A little ground flax seed, brown rice flour, & oat flour. I always have this mixture on hand. I used 3 TBSP of it for this recipe.

Because I left these in the refrigerator before I ate one, they didn’t fall apart or anything. I don’t know how they would do if I only left them in the refrigerator for an hour or two.

Mint Chocolate Chip Smoothie Recipe

 

This fine Monday, I’ve got a fabulous recipe and review for you. I was very blessed to receive a package of Vega One (All-In-One) Protein Powder from the wonderful people at Vega.

Now, I’m really picky about my protein powder…which, I assume most of you are. My protein powder needs to be:

  • Nutritious
  • Tasteful
  • Easy to use in all my recipes
  • And most importantly…made with EXCELLENT ingredients.

I’m very happy to say, that Vega HIT all of those key points. This health nut is quite pleased.

Here’s some delicious information about Vega One:

  • It has 50% of your daily intake of vitamins & minerals!
  • A whopping 15g of Protein
  • 6g Fiber
  • 1.5g omega-3…what!? Awesome
  • Antioxidants
  • Probiotics (which is so, so important! Especially for those who don’t take probiotics in their daily habits)
  • AND you get your GREENS! Yay

I think my favorite part of Vega All-In-One shake is that I can get all of that nutrition without putting so much effort. This is probably one of the best things, in my opinion, for those who are busy and on-the-go. We all forget to take the time to get our vitamins in or planning our meals to make sure we get out all of our greens and antioxidants. Vega makes it a little easier for us. Thank you, Vega!

As soon as I got the protein, I knew EXACTLY what I wanted to make. I’ve been in the mood for chocolate and mint lately, so why not make an extra creamy Mint Chocolate Chip smoothie!? It was the best idea ever. It was so good and there are seriously no words to describe it.

I added a little water after I got everything going in the blender since the cashews will make it extra creamy and thick.

If you happen to serve it to others or you just want to take a pretty picture, you can garnish it with more mint leaves and chopped dark chocolate…mmmm, yum!
