Happy WIAW! Ready for a post full of what I’ve been eating? I’m not here to like brag or think you just want to stare at my food…but I’m here posting this to share some ideas with you! I hope my meals can give you inspiration!

My Favorite Sandwich Recipe

Organic Ancient Grains Toast with coconut oil, muenster cheese, and chicken salad with grapes and cranberries and an apple on the side.

Southwest Chipotle Chicken Recipe

Good morning all!

If you are a clean eater who likes chicken, then this recipe will rock your socks off. It was so good!

This is what we are making…

Southwest Chipotle Chicken

  • 10-12 Chicken tenders (Cut into pinky sized pieces)
  • 2-3 TBSP. Dijon mustard
  • Juice of 1 lime
  • Southwest Chipotle Mrs. Dash seasoning (I didn’t measure, just put as much as I thought was right)
  • 1 TBSP. Extra Virgin Olive Oil
  • 2 TBSP. Coconut oil
  • A little extra Chili powder (optional)
  • A little extra cayenne (optional)
  • 1/2 TBSP. organic brown cane sugar (you can leave this out, but it really balances out the lime juice)
  • Pepper and salt to taste (the Mrs. Dash SC seasoning is salt free)
  • 1/2 cup chopped red onion
  • 3 TBSP. minced garlic

 

Directions:

  • Heat a skillet with the 2 TBSP of coconut oil on medium heat.
  • Mix the dijon mustard, juice of 1 lime, chipotle seasoning, olive oil, (chili powder and cayenne and brown sugar), and salt and pepper in a large mixing bowl.
  • Take your cut pieces of chicken tenders and place them in the bowl with the mixture.
  • Toss to evenly coat every piece of chicken. If you need to add any more seasoning or something, go ahead.
  • Place chicken in the pan, let cook around 7 minutes on each side.
  • Before you flip the chicken over, add onions and minced garlic all in the pan.
  • When you flip the chicken, stir it around a little bit to get some of the garlic.
  • TADA!
  • Done.

Rainy Mondays Don’t get me down

Happy Monday! Hope your day has been good. Mine was actually pretty laid back, which was terrific.

Breakfast

I started my morning with a green smoothie that turned brown due to adding blueberries, blackberries, and raspberries instead of just strawberries…Sad smile

I also added whey protein to the smoothie for protein. I wasn’t feeling like eating eggs this morning.

Lunch

I prepared my lunch last night using leftovers from last night’s dinner. I had half a sweet potato, quinoa with salsa, and sautéed chicken.

Sunday

Let’s take a look at Sunday’s dinner. It was so, so tasty. I love wholesome, clean meals such as these

I prepared sautéed mushrooms, sautéed chicken, baked sweet potatoes, and quinoa. With the mushrooms, I sautéed them in olive oil and salt; with the chicken tenders, I sautéed them in Mrs. Dash mesquite grille and spices: sea salt, oregano, sage, garlic powder, and curry. They only thing I would have done with the chicken was add more salt. I can never add the right amount!

Snack

So I totally roasted some pecans…it might be my favorite snack during the cold season.

They were delicious by the way, in case you were wondering. (Almost burnt them Disappointed smile)

And while the pecans were cooling off, I finally got around to painting my nails

I love this color because it looks good with almost everything and its not too crazy. And I also like how this brand of finger nail polish glides on perfectly. Plus!

Well that’s it! Getting pumped for Tuesday! Why? One day closer to Friday, whoop, whoop!
